Broth

  • 6 cup chicken broth low-sodium preferred
  • 3 tbsp white miso paste
  • 3 tbsp soy sauce low-sodium
  • 1 tbsp sesame oil toasted
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tbsp chili garlic sauce such as sambal oelek; adjust

Main

  • 12 oz fresh or dried ramen noodles discard seasoning packets
  • 8 oz shiitake mushrooms stems removed, caps sliced
  • 3 stalks green onions thinly sliced
  • 2 tbsp sesame seeds toasted
  • 2 sheet nori cut into strips

Soft-Boiled Eggs

  • 4 large eggs soft-boiled, halved
  • 1 tbsp vegetable oil

Instructions

  1. Bring a small #[Saucepan] of water to a boil. Gently lower the @[Large Eggs] in and cook for exactly ~[6 minutes and 30 seconds]. Transfer immediately to an ice bath for ~[5 minutes], then peel and set aside. The yolks should be jammy and slightly runny.
  2. Heat the @[Vegetable Oil] in a large #[Pot] over ^[medium heat]. Add the @[Garlic] and @[Ginger] and sauté for ~[1–2 minutes] until fragrant. Pour in the @[Chicken Broth] and bring to a gentle simmer. Whisk in the @[White Miso Paste], @[Soy Sauce], and @[Sesame Oil] until fully dissolved. Stir in @[Chili Garlic Sauce] if using. Keep the broth at a low simmer while you prepare the toppings.
  3. Add the sliced @[Shiitake Mushrooms] directly to the simmering broth and cook for ~[4–5 minutes] until tender. Stir in the baby spinach or bok choy and cook for ~[1–2 minutes] until just wilted. Taste the broth and adjust seasoning with more @[Soy Sauce] or @[White Miso Paste] if needed.
