Instructions
- Bring a small #[Saucepan] of water to a boil. Gently lower the @[Large Eggs] in and cook for exactly ~[6 minutes and 30 seconds]. Transfer immediately to an ice bath for ~[5 minutes], then peel and set aside. The yolks should be jammy and slightly runny.
- Heat the @[Vegetable Oil] in a large #[Pot] over ^[medium heat]. Add the @[Garlic] and @[Ginger] and sauté for ~[1–2 minutes] until fragrant. Pour in the @[Chicken Broth] and bring to a gentle simmer. Whisk in the @[White Miso Paste], @[Soy Sauce], and @[Sesame Oil] until fully dissolved. Stir in @[Chili Garlic Sauce] if using. Keep the broth at a low simmer while you prepare the toppings.
- Add the sliced @[Shiitake Mushrooms] directly to the simmering broth and cook for ~[4–5 minutes] until tender. Stir in the baby spinach or bok choy and cook for ~[1–2 minutes] until just wilted. Taste the broth and adjust seasoning with more @[Soy Sauce] or @[White Miso Paste] if needed.
- Add the @[Ramen Noodles] directly to the pot and cook according to package directions, usually ~[2–4 minutes] for fresh noodles or ~[3–5 minutes] for dried, stirring gently to separate them. Do not overcook — they should be tender but still have a slight chew.
