In a small mixing bowl, whisk together the 3 tbsp balsamic vinegar, 1 tbsp Dijon mustard, 1 tbsp honey, 1 clove garlic minced, 1 pinch fine sea salt, and 1 pinch black pepper. Slowly drizzle in the 3 tbsp extra-virgin olive oil while whisking continuously until the dressing is emulsified and smooth. Taste and adjust seasoning. Set aside.
