In a small mixing bowl, combine the softened unsalted butter, minced garlic, 1 tbsp fresh rosemary finely chopped, 1 tbsp fresh thyme leaves finely chopped, 1 tbsp fresh sage finely chopped, and 1 tsp lemon zest. Mix until well blended and set aside.

Pat the 4 lb bone-in turkey breast completely dry with paper towels. Season all over with 1 ½ tsp kosher salt and ½ tsp black pepper. Using your fingers, gently loosen the skin from the breast meat and spread 4 tbsp unsalted butter directly under the skin. Rub 4 tbsp unsalted butter all over the outside of the bone-in turkey breast.

Place the quartered 1 medium yellow onion in the bottom of the slow cooker to act as a rack. Pour the ½ cup chicken broth around the onion. Drizzle the 1 tbsp olive oil over the onion. Set the herb-buttered 4 lb bone-in turkey breast on top of the onion, skin-side up.
