In a large skillet, heat 1 tbsp olive oil over medium heat. Add 1 large onion and 3 cloves garlic, and sauté until softened, about 3 minutes.

Add the chopped fresh spinach and cook until wilted, about 3 minutes. Remove from heat and let cool slightly.

In a mixing bowl, combine 15 oz ricotta cheese, 1 egg, 1 cup of shredded mozzarella cheese, 1 tsp salt, and ½ tsp black pepper. Fold in the 8 cups fresh spinach mixture.

Spread a little 3 cups marinara sauce on the bottom of a baking dish. Layer 3 lasagna noodles, half of the ricotta cheese mixture, another layer of marinara sauce, and a sprinkle of grated Parmesan cheese. Repeat the layers, finishing with 9 lasagna noodles and remaining marinara sauce on top. Sprinkle with the remaining shredded mozzarella cheese.
