
Spinach Lasagna

This classic Italian Spinach Lasagna is a hearty, vegetarian-friendly dish featuring layers of tender pasta, creamy ricotta and mozzarella cheeses, and sautéed spinach bound together with rich marinara sauce. It's a comforting, crowd-pleasing meal that's perfect for family dinners or meal prep, combining fresh ingredients with satisfying, cheesy layers.

Preheat the Oven to 375°F.

Cook the Lasagna Noodles according to package instructions; drain and set aside.

In a large Skillet, heat Olive Oil over medium heat. Add Onion and Garlic, and sauté until softened, about 3 minutes.

Add the chopped Spinach and cook until wilted, about 3 minutes. Remove from heat and let cool slightly.

In a Bowl, combine Ricotta Cheese, Egg, 1 cup of Mozzarella Cheese, Salt, and Black Pepper. Fold in the Spinach mixture.

Spread a little Marinara Sauce on the bottom of a Baking Dish. Layer 3 Lasagna Noodles, half of the Ricotta Cheese mixture, another layer of Marinara Sauce, and a sprinkle of Parmesan Cheese. Repeat the layers, finishing with Lasagna Noodles and remaining Marinara Sauce on top. Sprinkle with the remaining Mozzarella Cheese.

Cover with Aluminum Foil and bake for 25 minutes. Then, remove the Aluminum Foil and bake for another 15 minutes, or until the cheese is bubbly and golden.

Let it sit for 10 minutes before slicing.
Notes
This lasagna can be assembled ahead of time and refrigerated for up to 24 hours before baking. It also freezes well if wrapped tightly. To reheat, thaw in the fridge overnight and bake as directed, adding extra time if needed to heat through.
