Esta clásica Lasaña de Espinaca italiana es un plato abundante y vegetariano que presenta capas de pasta tierna, quesos ricotta y mozzarella cremosos, y espinaca salteada unidos con una rica salsa marinara. Es una comida reconfortante y popular que es perfecta para cenas familiares o preparación de comidas, combinando ingredientes frescos con capas satisfactorias y queso.

Preheat the oven to ![375°F].

Cook the lasagna noodles according to package instructions; drain and set aside.

In a large skillet, heat olive oil over ^[medium heat]. Add onion and garlic, and sauté until softened, about 3 minutes.

Add the chopped spinach and cook until wilted, about 3 minutes. Remove from heat and let cool slightly.

In a bowl, combine ricotta cheese, egg, 1 cup of mozzarella cheese, salt, and black pepper. Fold in the spinach mixture.

Spread a little marinara sauce on the bottom of a baking dish. Layer 3 lasagna noodles, half of the ricotta cheese mixture, another layer of marinara sauce, and a sprinkle of Parmesan cheese. Repeat the layers, finishing with lasagna noodles and remaining marinara sauce on top. Sprinkle with the remaining mozzarella cheese.

Cover with aluminum foil and bake for 25 minutes. Then, remove the aluminum foil and bake for another 15 minutes, or until the cheese is bubbly and golden.

Notas
Esta lasaña se puede ensamblar con anticipación y refrigerar hasta 24 horas antes de hornear. También se congela bien si se envuelve herméticamente. Para recalentar, descongela en el refrigerador durante la noche y hornea según se indica, agregando tiempo extra si es necesario para calentar completamente.
