
Skillet Tacos

A fast, family-friendly weeknight dinner made entirely in one skillet. Seasoned ground beef is cooked with onion, garlic, and a bold homemade taco spice blend, then simmered with tomatoes and black beans until saucy and rich. Pile it into warm tortillas with all your favorite toppings and dinner is on the table in under 30 minutes.

Mix together the chili powder, cumin, smoked paprika, garlic powder, fine sea salt, and black pepper in a small mixing bowl. Set aside.

Heat a large skillet over ^[medium-high heat]. Add the lean ground beef and cook, breaking it up with a wooden spoon, until browned and no longer pink, about 5–6 minutes. Drain excess fat if needed.

Reduce heat to ^[medium]. Add the diced yellow onion to the skillet and cook, stirring occasionally, until softened, about 3–4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.

Sprinkle the spice blend over the lean ground beef and yellow onion mixture and stir well to coat everything evenly.

Pour in the diced tomatoes (with their juices) and add the drained black beans. Stir to combine, then simmer over ^[medium-low heat] for 5–7 minutes, until the liquid reduces slightly and the mixture is saucy but not watery. Taste and adjust fine sea salt as needed.

Warm the flour tortillas in a dry skillet or directly over a gas flame for 20–30 seconds per side. Spoon the taco filling into the flour tortillas and top with shredded cheddar or Mexican blend cheese, sour cream, a squeeze of lime, and fresh cilantro.
