
Roasted Chickpeas

Crispy, golden roasted chickpeas seasoned with smoky spices and olive oil — a satisfying, protein-packed side that doubles as a snack. Made entirely on one sheet pan, they're easy to batch-cook for meal prep and stay crunchy for days when stored properly.

Preheat your oven to ![425°F]. Drain and rinse the chickpeas thoroughly, then spread them on a clean kitchen towel or several layers of paper towels. Pat them very dry — the drier they are, the crispier they'll get. Let them air-dry for 5 minutes. Remove any loose skins that come off.

Transfer the dried chickpeas to a large mixing bowl. Drizzle with olive oil and toss to coat evenly. Add the smoked paprika, garlic powder, cumin, kosher salt, black pepper, and cayenne pepper (if using). Toss again until every chickpea is well coated in the spice mixture.

Spread the seasoned chickpeas in a single layer on a rimmed baking sheet — do not crowd them or they'll steam instead of roast. Roast on the center rack for 30–35 minutes, shaking the pan or stirring with a spatula halfway through, until the chickpeas are deep golden and audibly crunchy.

Remove from the oven and immediately toss with lemon zest if using. Let the chickpeas cool on the pan for 5 minutes — they'll crisp up even more as they cool. Taste and adjust kosher salt if needed before serving.
