2 can chickpeas 15 oz each, drained and rinsed
2 tbsp olive oil
1 tsp smoked paprika
0.75 tsp garlic powder
0.5 tsp ground cumin
0.75 tsp kosher salt
0.25 tsp black pepper freshly ground
0.25 tsp cayenne pepper
1 tsp lemon zest from about half a lemon

Instructions
- Preheat your #[Oven] to ![425°F]. Drain and rinse the @[Chickpeas] thoroughly, then spread them on a clean kitchen towel or several layers of paper towels. Pat them very dry — the drier they are, the crispier they'll get. Let them air-dry for ~[5 minutes]. Remove any loose skins that come off.
- Transfer the dried @[Chickpeas] to a large #[Mixing Bowl]. Drizzle with @[Olive Oil] and toss to coat evenly. Add the @[Smoked Paprika], @[Garlic Powder], @[Cumin], @[Kosher Salt], @[Black Pepper], and @[Cayenne Pepper] (if using). Toss again until every chickpea is well coated in the spice mixture.
- Spread the seasoned @[Chickpeas] in a single layer on a rimmed #[Baking Sheet] — do not crowd them or they'll steam instead of roast. Roast on the center rack for ~[30–35 minutes], shaking the pan or stirring with a #[Spatula] halfway through, until the chickpeas are deep golden and audibly crunchy.
- Remove from the #[Oven] and immediately toss with @[Lemon Zest] if using. Let the @[Chickpeas] cool on the pan for ~[5 minutes] — they'll crisp up even more as they cool. Taste and adjust @[Kosher Salt] if needed before serving.
