Quinoa

  • 1 cup quinoa rinsed well under cold water in a fine-mesh strainer
  • 2 cup water
  • 0.5 tsp fine sea salt for cooking quinoa

Main

  • 1 can chickpeas rinsed and drained
  • 1 medium cucumber seeded and diced
  • 1 medium red bell pepper diced
  • 1 cup cherry tomatoes halved
  • 2 medium avocado pitted, peeled, and sliced
  • 0.5 cup flat-leaf parsley finely chopped
  • 4 oz feta cheese crumbled
  • 0.25 cup sliced almonds toasted

Dressing

  • 0.25 cup extra-virgin olive oil
  • 0.25 cup fresh lemon juice from about 2–3 lemons
  • 2 tsp Dijon mustard
  • 1 tbsp red wine vinegar
  • 2 cloves garlic minced or pressed

  • 1 pinch black pepper freshly ground

Instructions

  1. Rinse the @[Quinoa] thoroughly in a #[Sieve] under ^[cold running water] for ~[about 30 seconds]. Combine the rinsed @[Quinoa], ~[2 cups] @[Water], and ~[½ tsp] @[Fine Sea Salt] in a #[Saucepan]. Bring to a boil over ^[medium-high heat], then reduce heat to ^[low], cover, and simmer for ~[15 minutes] until all the @[Water] is absorbed. Remove from heat and let steam, covered, for ~[5 minutes]. Fluff with a #[Dipping Fork] and spread on a plate to cool slightly.
  2. While the @[Quinoa] cooks, whisk together the @[Extra-Virgin Olive Oil], @[Lemon Juice], @[Dijon Mustard], @[Red Wine Vinegar], minced @[Garlic], @[Fine Sea Salt], and freshly ground @[Black Pepper] in a #[Mixing Bowl] until fully emulsified.
