Rinse the 1 cup quinoa thoroughly in a sieve under cold running water for about 30 seconds. Combine the rinsed 1 cup quinoa, 2 cups 2 cups water, and ½ tsp ½ tsp fine sea salt in a saucepan. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes until all the water is absorbed. Remove from heat and let steam, covered, for 5 minutes. Fluff with a dipping fork and spread on a plate to cool slightly.

While the 1 cup quinoa cooks, whisk together the ¼ cup extra-virgin olive oil, ¼ cup fresh lemon juice, 2 tsp Dijon mustard, 1 tbsp red wine vinegar, minced garlic, ½ tsp fine sea salt, and freshly ground 1 pinch black pepper in a mixing bowl until fully emulsified. Taste and adjust seasoning — add more ¼ cup fresh lemon juice for brightness or a pinch of fine sea salt as needed. Set aside.

If using sliced sliced almonds toasted, toast them in a skillet over medium heat for 2–3 minutes, stirring frequently, until golden and fragrant. Remove from heat immediately. Prep all remaining toppings: dice the 1 medium cucumber seeded and diced and 1 medium red bell pepper, halve the 1 cup cherry tomatoes, slice the 2 medium avocado pitted, and chop the ½ cup flat-leaf parsley.

Divide the warm (or room-temperature) 1 cup quinoa evenly among four bowls. Arrange the 1 can chickpeas, 1 medium cucumber seeded and diced, 1 medium red bell pepper, 1 cup cherry tomatoes, and 2 medium avocado pitted slices over the 1 cup quinoa. Drizzle generously with the ¼ cup extra-virgin olive oil. Top with chopped flat-leaf parsley, crumbled 4 oz feta cheese (if using), and toasted ¼ cup sliced almonds toasted. Serve immediately, with extra dressing on the side.
