
Pork Chops and Apples

A classic, family-friendly sheet pan dinner where bone-in pork chops roast alongside sweet-tart apples, onions, and fresh thyme. Everything caramelizes together on one pan for an easy weeknight meal with minimal cleanup.

Preheat your oven to ![425°F]. Line a large baking sheet with aluminum foil or parchment paper for easy cleanup. Pat the pork chops dry with paper towels — this helps them brown rather than steam.

In a small mixing bowl, whisk together 2 tablespoons of the olive oil, the whole-grain mustard, balsamic vinegar, minced garlic, thyme, smoked paprika, ½ teaspoon kosher salt, and the black pepper. Rub this mixture all over both sides of the pork chops and set them aside to marinate briefly while you prep the produce.

Toss the honeycrisp apple wedges and yellow onion slices with the remaining 1 tablespoon of olive oil and the remaining ½ teaspoon of kosher salt. Spread them in a single layer across the baking sheet, leaving space in the center for the pork chops.

Nestle the marinated pork chops on top of the honeycrisp apple and yellow onion mixture. Roast in the preheated oven for 20–25 minutes, flipping the pork chops once halfway through, until the chops register %[145°F internally] and the honeycrisp apple and yellow onion are tender and caramelized at the edges.

Remove the pan from the oven and let the pork chops rest for 5 minutes before serving. Spoon the caramelized honeycrisp apple and yellow onion alongside each chop and garnish with fresh Italian flat-leaf parsley if desired.
