Pour the Apple Cider into a large Saucepan and set over medium heat.

Add the Cinnamon Sticks, whole cloves, Allspice Berries, Star Anise (if using), Nutmeg, Brown Sugar, and a pinch of Salt. Stir gently to begin dissolving the sugar.

Add the Orange rounds and Lemon rounds (if using), pressing them lightly into the cider.

Bring the cider up to a gentle simmer over medium heat — do not boil. Reduce heat to low once you see small bubbles forming around the edges.

Simmer on low heat for 15 minutes, allowing the spices and citrus to fully infuse the cider. The liquid will deepen in color and your kitchen will smell amazing.

Taste and adjust: add more Brown Sugar for sweetness, or let it simmer uncovered for a few extra minutes if you'd like a more concentrated spice flavor.

Strain the cider through a fine mesh Sieve into mugs, discarding the whole spices and citrus rounds.
