Pour the 64 fl oz fresh apple cider into a large saucepan and set over medium heat.

Add the 3 whole cinnamon sticks, whole cloves, 6 whole allspice berries, 1 whole star anise (if using), ¼ tsp ground nutmeg, 3 tbsp brown sugar, and a pinch of kosher salt. Stir gently to begin dissolving the sugar.

Add the 1 whole orange rounds and 1 whole lemon rounds (if using), pressing them lightly into the cider.

Bring the cider up to a gentle simmer over medium heat — do not boil. Reduce heat to low once you see small bubbles forming around the edges.
