Preheat your oven to 425°F. Line a large baking sheet with aluminum foil or parchment paper for easy cleanup. In a mixing bowl, whisk together the 3 tbsp Dijon mustard, 3 tbsp honey, 1 tbsp mayonnaise, 1 tsp apple cider vinegar, and ½ tsp garlic powder until smooth. Set the glaze aside.

Toss the halved 1 lb baby potatoes and 2 medium carrots peeled and cut into 1-inch pieces pieces with 1 tbsp olive oil of olive oil and ¼ teaspoon ½ tsp salt directly on the baking sheet. Spread them in a single layer, leaving space in the center for the 4 pieces bone-in.

Pat the 4 pieces bone-in dry and rub them all over with 1 tbsp olive oil 1 tbsp olive oil, ½ teaspoon ½ tsp salt, and ¼ teaspoon ¼ tsp black pepper. Nestle the 4 pieces bone-in skin-side up among the vegetables on the baking sheet. Spoon or brush about half of the honey 3 tbsp Dijon mustard glaze generously over the tops of the bone-in pieces.

Roast in the preheated oven for 20 minutes. Remove the pan, brush the remaining glaze over the 4 pieces bone-in, and stir the 1 lb baby potatoes. Return to the oven and roast for another 12–15 minutes, until the 4 pieces bone-in skin is deep golden and caramelized and an instant-read meat thermometer inserted into the thickest part reads 165°F.
