Pat the 4 pieces salmon fillets completely dry with paper towels — this is key for a good sear. Season both sides generously with ½ tsp salt and ¼ tsp black pepper. In a small mixing bowl, whisk together the 3 tbsp honey, 2 tbsp soy sauce, 1 tbsp lemon juice, and 1 tsp lemon zest (if using). Set the sauce aside.
