Instructions
- In a large #[Mixing Bowl], combine the @[Rolled Oats], @[Vanilla Protein Powder], @[Flaxseed], @[Chia Seeds] (if using), @[Unsweetened Shredded Coconut] (if using), @[Mini Chocolate Chips], and @[Fine Sea Salt]. Stir together until evenly distributed.
- Add the @[Natural Peanut Butter], @[Honey], and @[Vanilla Extract] to the dry ingredients. Mix everything together with a spatula or your hands until a cohesive, sticky dough forms. If the mixture seems too dry, add ~[1 tablespoon] of @[Honey] or @[Natural Peanut Butter] at a time until it holds together when pressed.
- Cover the #[Mixing Bowl] with #[Plastic Wrap] or a #[Lid] and refrigerate for ~[at least 30 minutes]. Chilling firms up the mixture, making it much easier to roll into balls.
- Line a #[Baking Sheet] with #[Parchment Paper]. Using about ~[1.5 tablespoons] of dough per bite, roll the mixture between your palms into compact balls (roughly 1-inch diameter). Place each ball on the prepared #[Baking Sheet].
- Transfer the #[Baking Sheet] to the refrigerator for ~[10–15 minutes] to set. Once firm, transfer the energy bites to an #[Airtight Container]. Store in the fridge for ~[up to 1 week] or freeze for ~[up to 3 months].
