In a large mixing bowl, combine the rolled oats, vanilla protein powder, flaxseed, chia seeds (if using), unsweetened shredded coconut (if using), mini chocolate chips, and fine sea salt. Stir together until evenly distributed.

Add the natural peanut butter, honey, and vanilla extract to the dry ingredients. Mix everything together with a spatula or your hands until a cohesive, sticky dough forms. If the mixture seems too dry, add 1 tablespoon of honey or natural peanut butter at a time until it holds together when pressed.

Cover the mixing bowl with plastic wrap or a lid and refrigerate for at least 30 minutes. Chilling firms up the mixture, making it much easier to roll into balls.
