In a mixing bowl or mason jar, whisk together the 1 cup unsweetened almond milk or oat milk or whole milk, ½ cup plain Greek yogurt full-fat or 2% for best creaminess, 1 tbsp maple syrup, 1 tsp pure vanilla extract, and a pinch of pinch fine sea salt until smooth. If using 1 scoop vanilla protein powder about 30g, add it now and whisk vigorously until fully dissolved with no lumps.

Uses

  • Mixing Bowl
  • Unsweetened Almond Milk
  • Unsweetened Coconut
  • Almond Butter
  • Plain Greek Yogurt
  • Maple Syrup
  • Vanilla Extract
  • 5 min

Add the ¼ cup chia seeds and stir well to combine. Let the mixture sit for 5 minutes, then stir again — this second stir is key to preventing clumping and ensuring the seeds are evenly distributed.

  • Hemp Seed

Cover the jar or mixing bowl and refrigerate for at least 4 hours, or overnight (up to 24 hours). The pudding is ready when it has thickened to a creamy, spoonable consistency. If it's too thick after chilling, stir in a splash of unsweetened almond milk or oat milk or whole milk to loosen.

Uses

  • Mixing Bowl
  • Unsweetened Almond Milk
  • Unsweetened Coconut
  • Almond Butter

When ready to serve, give the pudding a good stir. Divide into two jars or bowls and top with fresh fresh mixed berries strawberries, a drizzle of almond butter, 2 tbsp unsweetened shredded coconut toasted if desired, and 1 tbsp hemp seeds for extra protein and crunch. Serve immediately or keep refrigerated until ready to eat.
