Instructions

  1. In a small #[Mixing Bowl], whisk together the @[Olive Oil], @[Minced Garlic], @[Lemon Juice], @[Lemon Zest], @[Dried Oregano], @[Smoked Paprika], @[Kosher Salt], and @[Black Pepper] until well combined.
  2. Pat the @[Salmon Fillets] dry with paper towels and place them in a shallow dish or on a plate. Spoon or brush the marinade evenly over all sides of the fillets. Let them rest at room temperature for ~[10 minutes] while you preheat the grill.
  3. Preheat your outdoor #[Grill] or #[Grill Pan] over ^[medium-high heat] (about ![400–425°F]). Lightly oil the grill grates with a folded paper towel dipped in @[Olive Oil], using #[Tongs]. Place the @[Salmon Fillets] skin-side down on the grill. Cook for ~[4–5 minutes] without moving them, until the skin is crispy and releases easily from the grates.
  4. Carefully flip the @[Salmon Fillets] using #[Tongs] or a wide #[Spatula]. Cook for another ~[3–4 minutes] on the flesh side, until the @[Salmon Fillets] is opaque and flakes easily with a fork. An instant-read #[Meat Thermometer] inserted into the thickest part should read %[125–130°F for medium] or %[145°F for well done].
  5. Transfer the @[Salmon Fillets] to a serving plate and let it rest for ~[2 minutes]. Garnish with freshly chopped @[Fresh Parsley] and serve immediately with @[Lemon] wedges on the side.
