In a small mixing bowl, whisk together the 3 tbsp olive oil, 3 cloves garlic, 2 tbsp fresh lemon juice, 1 tsp lemon zest, 1 tsp dried oregano, ½ tsp smoked paprika, ¾ tsp kosher salt, and ¼ tsp black pepper until well combined.

Pat the 4 pieces salmon fillets dry with paper towels and place them in a shallow dish or on a plate. Spoon or brush the marinade evenly over all sides of the fillets. Let them rest at room temperature for 10 minutes while you preheat the grill.

Preheat your outdoor grill or grill pan over medium-high heat (about 400–425°F). Lightly oil the grill grates with a folded paper towel dipped in 3 tbsp olive oil, using tongs. Place the 4 pieces salmon fillets skin-side down on the grill. Cook for 4–5 minutes without moving them, until the skin is crispy and releases easily from the grates.
