Position an oven rack about 6 inches from the broiler element and preheat the broiler to high. In a large mixing bowl, whisk together the 8 large eggs, ¼ cup whole milk, ½ tsp fine sea salt, and ¼ tsp freshly ground black pepper until smooth and slightly frothy, about 1 minute. Stir in half the shredded cheddar cheese (about ⅓ cup) and set aside.

Add the 2 cups baby spinach and stir until just wilted, about 1 minute.

Spread 1 small yellow onion in an even layer across the bottom of the skillet. Pour the egg mixture evenly over the top. Cook undisturbed over medium-low heat until the edges are set and the center is still slightly jiggly, about 5–6 minutes.
