8 large eggs
0.25 cup whole milk
0.5 tsp fine sea salt
0.25 tsp freshly ground black pepper

1 small yellow onion thinly sliced
1 whole red bell pepper diced
2 cloves garlic minced
2 cup baby spinach loosely packed
0.75 cup shredded cheddar cheese divided
2 tbsp fresh parsley chopped, for garnish

Instructions
- Position an oven rack about 6 inches from the broiler element and preheat the #[Broiler] to ^[high].
