Frittata

A golden, oven-finished Italian egg dish loaded with sautéed vegetables and melted cheese. This classic frittata comes together in one skillet — started on the stovetop and finished under the broiler for a perfectly set, lightly puffed top. It's hearty, endlessly adaptable, and on the table in under 30 minutes.

  • 0.25 cup whole milk
  • 0.5 tsp fine sea salt
  • 0.25 tsp freshly ground black pepper
  • 2 tbsp extra-virgin olive oil
  • 1 small yellow onion thinly sliced
  • 1 whole red bell pepper diced
  • 2 cloves garlic minced
  • 2 cup baby spinach loosely packed
  • 0.75 cup shredded cheddar cheese divided
  • 2 tbsp fresh parsley chopped, for garnish

Instructions

  1. Position an oven rack about 6 inches from the broiler element and preheat the #[Broiler] to ^[high]. In a large #[Mixing Bowl], whisk together the @[Eggs], @[Milk], @[Fine Sea Salt], and @[Black Pepper] until smooth and slightly frothy, about ~[1 minute]. Stir in half the @[Cheddar Cheese] (about ⅓ cup) and set aside.
