Add the 1 can chickpeas drained and, ½ cup fresh parsley roughly chopped, ¼ cup fresh cilantro roughly chopped, ½ medium yellow onion, 4 cloves garlic, 1 ½ tsp ground cumin, 1 tsp ground coriander, ½ tsp fine sea salt, and ¼ tsp cayenne pepper (if using) to a food processor. Pulse 15–20 times until the mixture is coarsely ground — it should hold together when pressed but not be a smooth paste. Transfer to a mixing bowl, stir in the 2 tbsp all-purpose flour, and refrigerate for 10 minutes to firm up.

While the falafel mixture chills, whisk together the ¼ cup tahini well-stirred, 2 tbsp fresh lemon juice, minced garlic, and a pinch of fine sea salt in a small mixing bowl. Add 3 tbsp water more to thin one tablespoon at a time, whisking until the sauce is smooth and pourable. Taste and adjust 2 tbsp fresh lemon juice or ½ tsp fine sea salt as needed. Set aside.

Shape the chilled mixture into 12 small patties (about 2 tbsp each). Heat the 3 tbsp extra-virgin olive oil for pan-frying in a large skillet over medium heat. Working in batches, cook the falafel patties for 3–4 minutes per side until deep golden brown and crispy. Transfer to a paper-towel-lined plate. Repeat with remaining patties, adding a little more 3 tbsp extra-virgin olive oil for pan-frying if needed.

Warm the flatbreads in a dry skillet or microwave for 30 seconds. Spread a generous drizzle of tahini well-stirred sauce down the center of each flatbread. Layer with shredded 2 cups romaine lettuce, diced medium tomatoes, ½ medium cucumber slices, and pickled red ½ medium yellow onion. Place 3 falafel patties on each wrap, drizzle with more ¼ cup tahini well-stirred sauce, then fold or roll tightly and serve immediately.
