Lay one 4 large flour tortillas 10-inch size flat in the skillet. Immediately spread about ¾ cup of the cheese blend evenly over one half of the tortilla, leaving a 1/2-inch border at the edge. Fold the empty half over the cheese to form a half-moon shape and press down lightly with the spatula.

Repeat with the remaining butter, 2 tbsp vegetable oil, and 4 large flour tortillas 10-inch size to make 4 quesadillas total, adjusting the heat as needed — the pan will get hotter with each batch, so you may need to lower it slightly.
