
Classic Cheese Quesadillas

In a small mixing bowl, combine the shredded monterey jack cheese and sharp cheddar cheese. Toss together so they're evenly mixed. If using garlic powder and cumin, mix them into the cheese blend now.

Heat a large skillet over ^[medium heat]. Add half the butter and half the vegetable oil (about 1/2 tbsp each) and let it melt together, swirling to coat the pan.

Lay one flour tortillas flat in the skillet. Immediately spread about 3/4 cup of the cheese blend evenly over one half of the tortilla, leaving a 1/2-inch border at the edge. Fold the empty half over the cheese to form a half-moon shape and press down lightly with the spatula.

Cook for 2–3 minutes, pressing gently with the spatula occasionally, until the bottom is deep golden brown and the cheese is beginning to melt. Peek at the underside — you want a rich golden color, not pale yellow.

Carefully flip the quesadilla using a wide spatula. Cook the second side for 2 minutes, pressing gently, until golden brown and the cheese is fully melted. Transfer to a cutting board and let it rest for 1 minute before cutting.

Repeat with the remaining butter, vegetable oil, and flour tortillas to make 4 quesadillas total, adjusting the heat as needed — the pan will get hotter with each batch, so you may need to lower it slightly.

Cut each quesadilla into 3 triangles using a sharp knife or pizza cutter. Serve immediately with sour cream, salsa, sliced avocado, fresh cilantro, and lime wedges on the side.
