Pat the chicken breasts completely dry with paper towel — this is key for a good sear. If the breasts are thick (over 1 inch), place them between two sheets of plastic wrap and pound to an even thickness of about ¾ inch so they cook evenly.

In a small mixing bowl, combine the garlic powder, smoked paprika, onion powder, Italian seasoning, kosher salt, black pepper, and cayenne pepper (if using). Drizzle the olive oil over both sides of the chicken breasts, then rub the spice mixture evenly all over each breast.
