Instructions
- 1
Preheat your oven to ![400°F]. Pat the chicken breasts dry with paper towel, then pound to an even 3/4-inch thickness. In a small mixing bowl, mix together the garlic powder, Italian seasoning, salt, and black pepper. Season both sides of each chicken breast generously with the spice mixture.
- 2
Heat 2 tablespoons of olive oil in a large oven over ^[medium-high heat] until shimmering. Add the chicken breasts and sear without moving them for 4–5 minutes until a deep golden crust forms. Flip and sear the other side for 2–3 minutes.
- 3
Remove the skillet from the heat. Layer 2–3 tomato slices on top of each chicken breast, followed by 2–3 slices of fresh mozzarella. Transfer the skillet to the preheated oven and bake for 10–13 minutes, until the mozzarella is melted and bubbly and the chicken reaches an internal temperature of %[165°F].

Remove from the oven and let the chicken rest for 3 minutes. Scatter fresh basil leaves over the top, drizzle generously with balsamic glaze and a touch of olive oil if desired, and serve immediately.
