
Black Bean Soup

Heat the extra-virgin olive oil in a large Dutch oven or heavy-bottomed pot over ^[medium heat]. Stir in the ground cumin, smoked paprika, red pepper flakes (if using), fine sea salt, and black pepper. Toast the spices with the vegetables for about 1 minute, stirring constantly, until they smell fragrant and slightly deepened in color.

Add the rinsed black beans (plus the reserved liquid from one can), low-sodium vegetable broth, and bay leaves. Stir everything together and bring to a boil over ^[medium-high heat]. Stir in the fresh lime juice and chopped cilantro. Taste and adjust seasoning with more fine sea salt, black pepper, or lime juice as needed. If the soup is too thick, add a splash of broth or water to reach your desired consistency.
