  • 2 tbsp extra-virgin olive oil
  • 1 medium yellow onion finely chopped
  • 1 medium red bell pepper stemmed, seeded, and diced
  • 4 cloves garlic minced
  • 1 whole jalapeño seeded and minced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp red pepper flakes
  • 3 can black beans rinsed and drained, liquid from 1 can reserved
  • 4 cup vegetable broth low-sodium
  • 2 whole bay leaves
  • 1 tsp fine sea salt plus more
  • 0.5 tsp black pepper freshly ground
  • 2 tbsp lime juice freshly squeezed (about 1 lime)
  • 0.25 cup fresh cilantro finely chopped
  • 1 whole lime cut into wedges
  • 1 whole avocado sliced or diced

Instructions

  1. Heat the @[Extra-Virgin Olive Oil] in a large #[Dutch Oven] or heavy-bottomed #[Pot] over ^[medium heat]. Add the chopped @[Yellow Onion] and diced @[Red Bell Pepper] and cook, stirring occasionally, until softened and lightly golden, about ~[7–8 minutes]. Add the minced @[Garlic] and @[Jalapeño] (if using) and cook for another ~[1–2 minutes] until fragrant.
  2. Stir in the @[Ground Cumin], @[Smoked Paprika], @[Red Pepper Flakes] (if using), @[Fine Sea Salt], and @[Black Pepper]. Toast the spices with the vegetables for about ~[1 minute], stirring constantly, until they smell fragrant and slightly deepened in color.
  3. Add the rinsed @[Black Beans] (plus the reserved liquid from one can), @[Low-Sodium Vegetable Broth], and @[Bay Leaves]. Stir everything together and bring to a boil over ^[medium-high heat].
