Preheat your oven to 400°F. Line a rimmed baking sheet with parchment paper. Pat the 4 pieces salmon fillets dry with paper towel — this helps the seasoning stick and promotes even browning.

In a small mixing bowl, whisk together the 2 tbsp extra-virgin olive oil, 3 cloves garlic minced, 1 whole lemon, 1 tsp smoked paprika, ¾ tsp fine sea salt, and ½ tsp freshly ground black pepper. If using 1 tbsp Dijon mustard, whisk it in now for a tangy, sticky glaze that helps the seasoning adhere.
