Place the 6 slices bacon pieces in a large cold skillet and set over medium heat. Cook, stirring occasionally, for 6–8 minutes until the 6 slices bacon is crispy. Transfer to a paper-towel-lined plate. Pour off all but about 1 tbsp of the bacon fat and leave it in the pan.

Increase the heat to medium-high. Add the diced medium yellow onion to the skillet with the reserved 6 slices bacon fat and cook for 2–3 minutes until softened. Add the 2 cloves garlic and cook 30 seconds until fragrant. Add the 1 ½ lb ground beef, breaking it apart with a spatula. Season with 1 tsp garlic powder, ½ tsp smoked paprika, ½ tsp kosher salt, and ¼ tsp black pepper. Cook for 6–8 minutes, stirring occasionally, until the 1 ½ lb ground beef is browned and cooked through. Drain any excess fat if needed.
