Main

  • 1.5 lb ground beef 80/20 blend
  • 1 medium yellow onion finely diced
  • 2 cloves garlic minced

Bacon

  • 6 slices bacon cut into 1-inch pieces

Beef Mixture

  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp kosher salt plus more
  • 0.25 tsp black pepper freshly ground
  • 1 cup shredded cheddar cheese freshly shredded from a block

Bowl Base

  • 6 cup romaine lettuce shredded or roughly chopped
  • 2 medium tomatoes diced
  • 0.5 medium red onion thinly sliced
  • 1 medium dill pickle sliced into rounds

Burger Sauce

  • 0.25 cup mayonnaise
  • 1 tbsp sugar-free ketchup or regular ketchup

Instructions

  1. Place the @[Bacon] pieces in a large cold #[Skillet] and set over ^[medium heat]. Cook, stirring occasionally, for ~[6–8 minutes] until the @[Bacon] is crispy. Transfer to a paper-towel-lined plate. Pour off all but about 1 tablespoon of the @[Bacon] fat and leave it in the pan.
  2. Increase the heat to ^[medium-high]. Add the diced @[Medium Yellow Onion] to the #[Skillet] with the reserved @[Bacon] fat and cook for ~[2–3 minutes] until softened. Add the @[Garlic] and cook ~[30 seconds] until fragrant. Add the @[Ground Beef], breaking it apart with a #[Spatula]. Season with @[Garlic Powder], @[Paprika], @[Kosher Salt], and @[Black Pepper]. Cook for ~[6–8 minutes], stirring occasionally, until the @[Beef] is browned and cooked through. Drain any excess fat if needed.
  3. Stir in the @[Yellow Mustard] and @[Worcestershire Sauce]. Cook for ~[1 minute] more, tossing to coat the @[Beef] evenly. Remove the #[Skillet] from heat and sprinkle the shredded @[Cheddar Cheese] over the @[Beef]. Let it melt for ~[1–2 minutes], then fold in the crispy @[Bacon].
