Ayran (Turkish Yogurt Drink)
About this recipe
Ayran is a refreshing, lightly salted yogurt drink beloved across Turkey, the Middle East, and Central Asia. Made with just three ingredients — yogurt, cold water, and a pinch of salt — it's frothy, cooling, and endlessly satisfying. The secret to a great Ayran is using full-fat yogurt and blending it vigorously to create that signature foam on top. Ready in under 5 minutes, it pairs beautifully with grilled meats, kebabs, or spicy dishes, and is just as good enjoyed on its own on a hot day.
Instructions
- 1
Add the chilled yogurt, cold water, and salt to a blender. For best results, make sure both the yogurt and water are very cold — this helps create a thick, lasting froth.
- 2
Blend on ^[high speed] for 45–60 seconds until the mixture is completely smooth, uniform, and a generous foam has formed on top. The foam is the hallmark of a great Ayran — don't skimp on blending time.
- 3
Taste and adjust salt if needed. Ayran should be pleasantly salty — not flat, but not overpowering. Add a tiny bit more water if you prefer a thinner consistency.
- 4
Pour immediately into chilled glasses over ice cubes. Spoon any remaining foam from the blender on top of each glass — this is the best part! Garnish with a pinch of crumbled dried mint if desired. Serve right away.
