Add the chilled 1 cup plain full-fat yogurt, 1 cup cold water ice-cold for best froth, and ¼ tsp fine salt adjust to a blender. For best results, make sure both the 1 cup plain full-fat yogurt and 1 cup cold water ice-cold for best froth are very cold — this helps create a thick, lasting froth.

Blend on high speed for 45–60 seconds until the mixture is completely smooth, uniform, and a generous foam has formed on top. The foam is the hallmark of a great Ayran — don't skimp on blending time.

Taste and adjust ¼ tsp fine salt adjust if needed. Ayran should be pleasantly salty — not flat, but not overpowering. Add a tiny bit more 1 cup cold water ice-cold for best froth if you prefer a thinner consistency.
