  • 1 min

Crack the 4 large eggs into a mixing bowl, add the 2 tbsp unsweetened almond milk, ¼ tsp fine sea salt, and ¼ tsp black pepper. Whisk vigorously until the yolks and whites are fully combined and slightly frothy, about 30 seconds. Set aside.

  • Black Pepper
  • 1–1 min
  • Medium-low

Heat the 1 tbsp olive oil in a skillet over medium-low heat. Add the 2 cloves garlic and sauté for about 30–45 seconds until fragrant, being careful not to let it brown.

  • Garlic
  • 1–4 min
  • Medium-low

Pour the 4 large eggs into the skillet. Let it sit undisturbed for 20–30 seconds until the edges just begin to set, then use a spatula to gently fold and push the eggs from the edges toward the center in slow, sweeping motions. Continue folding every 15–20 seconds, keeping the heat on medium-low, until the eggs are just barely set and still look slightly glossy — about 3 to 4 minutes total. Remove from heat immediately; residual heat will finish them.

Uses

  • Skillet
  • Spatula
  • Egg

While the eggs are still warm, gently fold in the 1 large ripe avocado halved and drizzle with 1 tsp fresh lime juice. Sprinkle with ¼ tsp chili flakes adjust and taste for seasoning, adding more ¼ tsp fine sea salt if needed.

Uses

  • Egg
  • Avocado
  • Lime Juice
  • Red Pepper Flakes
  • Sea Salt

Divide between two plates. Garnish with fresh fresh cilantro roughly chopped and toasted 1 tsp pepitas if using. Serve immediately.
