In a small skillet over ^[medium heat], combine the old-fashioned rolled oats, 2 tablespoons honey, melted coconut oil, and fine sea salt. Stir constantly for 4–5 minutes until the oats are golden and fragrant. Spread onto a plate or cutting board and let cool completely — the granola will crisp up as it cools.

In a mixing bowl, stir together the Greek yogurt, 2 tablespoons honey, and vanilla extract until smooth and well combined. Taste and adjust sweetness with a little more honey if needed.

Rinse and prep all fruit: hull and slice the strawberries, rinse the blueberries, and slice the banana if using. Pat dry with a paper towel so excess moisture doesn't water down the Greek yogurt.

To assemble each parfait, spoon about ¼ cup of the sweetened Greek yogurt into the bottom of a glass or mixing bowl. Add a layer of mixed fruit, then a generous spoonful of granola. Repeat the layers — Greek yogurt, fruit, granola — until the glass is full. Finish with a drizzle of honey and a pinch of toasted unsweetened shredded coconut if desired. Serve immediately for the crunchiest texture.
