In a small skillet over medium heat, combine the 1 cup old-fashioned rolled oats, 2 tbsp honey, melted coconut oil, and ¼ tsp fine sea salt. Stir constantly for 4–5 minutes until the oats are golden and fragrant. Spread onto a plate or cutting board and let cool completely — the granola will crisp up as it cools.

In a mixing bowl, stir together the 4 cups plain Greek yogurt, 2 tbsp honey, and 1 tsp vanilla extract until smooth and well combined. Taste and adjust sweetness with a little more 2 tbsp honey if needed.

Rinse and prep all fruit: hull and slice the 1 cup fresh strawberries, rinse the 1 cup fresh blueberries, and slice the 1 medium banana if using. Pat dry with a paper towel so excess moisture doesn't water down the 4 cups plain Greek yogurt.

To assemble each parfait, spoon about ¼ cup of the sweetened 4 cups plain Greek yogurt into the bottom of a glass or mixing bowl. Add a layer of mixed fruit, then a generous spoonful of granola. Repeat the layers — 4 cups plain Greek yogurt, fruit, granola — until the glass is full. Finish with a drizzle of honey and a pinch of toasted 1 tbsp unsweetened shredded coconut if desired. Serve immediately for the crunchiest texture.
