In a large mixing bowl, whisk together the Greek yogurt, extra-virgin olive oil, lemon zest, lemon juice, garlic minced, cumin, smoked paprika, coriander, oregano, kosher salt, and black pepper until smooth and well combined.

Add the chicken thighs to the bowl and turn to coat thoroughly in the marinade. Transfer to a zip-lock bag or cover the bowl tightly with plastic wrap. Refrigerate for at least 2 hours, or up to 24 hours for maximum flavor and tenderness.
