  • 2 can cannellini beans rinsed and drained
  • 3 cup vegetable broth low-sodium
  • 2 whole bay leaves
  • 2 cup baby spinach roughly chopped
  • 1 tbsp lemon juice freshly squeezed
  • 0.75 tsp fine sea salt plus more
  • 0.5 tsp black pepper freshly ground
  • 0.25 cup fresh parsley roughly chopped

Instructions

  1. Heat the @[Extra-Virgin Olive Oil] in a large #[Dutch Oven] or heavy-bottomed #[Pot] over ^[medium heat]. Add the diced @[Yellow Onion], @[Carrots], and @[Celery]. Cook, stirring occasionally, for ~[7–8 minutes] until the vegetables are softened and the onion is translucent.
  2. Add the minced @[Garlic], @[Cumin], @[Smoked Paprika], and @[Red Pepper Flakes] (if using). Stir and cook for ~[1–2 minutes] until fragrant, being careful not to let the garlic burn.
  3. Pour in the diced @[Tomatoes] (with their juices), rinsed @[Cannellini Beans], @[Vegetable Broth], and @[Bay Leaves]. Stir to combine. Season with @[Fine Sea Salt] and @[Black Pepper].
