Heat the 2 tbsp olive oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add the diced large yellow onion and 1 whole red bell pepper and cook, stirring occasionally, for 5–6 minutes until softened. Add the 4 cloves garlic and 1 whole jalapeño seeded and minced (if using) and cook for another 1 minute until fragrant.

Stir in all the spices — 2 ½ tsp chili powder, 1 ½ tsp ground cumin, 1 tsp smoked paprika, ½ tsp dried oregano, ½ tsp salt, and ¼ tsp black pepper. Toast the spices with the vegetables for 1 minute, stirring constantly, to bloom their flavor.

Pour in the 1 can fire-roasted diced tomatoes (with their juices), 1 can tomato sauce, and 1 cup vegetable broth. Add the drained black beans, 1 can kidney beans, and 1 can pinto beans, then stir in the 1 ½ cups frozen or fresh corn kernels. Bring everything to a boil over medium-high heat.
