In a small mixing bowl, whisk together the 3 tbsp soy sauce low-sodium preferred, 1 tbsp oyster sauce, 1 tbsp sesame oil, 1 tsp cornstarch, 1 tsp sugar, and ¼ cup vegetable broth until the 1 tsp cornstarch is fully dissolved and the sauce is smooth. Set aside.

Prepare all vegetables before you start cooking — stir frying moves fast. Slice the 2 medium carrots peeled thin on the diagonal, cut the 1 medium zucchini halved lengthwise into half-moons, strip the 1 whole bell pepper, wedge the 1 medium red onion, and break the 2 cups broccoli florets into bite-sized florets. Keep the 2 cups fresh spinach loosely separate as it goes in last.

Heat a wok or large skillet over high heat until very hot. Add the vegetable oil and swirl to coat. Add the 4 cloves garlic and 1 tbsp fresh ginger grated and stir fry for 30 seconds until fragrant. Add the 2 medium carrots peeled and 2 cups broccoli florets first (they take longest) and stir fry for 3 minutes, tossing constantly.

Add the 1 medium red onion, 1 whole bell pepper, and 1 medium zucchini halved lengthwise to the wok. Continue stir frying over high heat for another 3–4 minutes until the vegetables are crisp-tender and lightly charred at the edges.

Pour the sauce over the vegetables and toss well to coat. Cook for 1–2 minutes until the sauce thickens and clings to the vegetables. Add the fresh fresh spinach loosely and toss for another 30–60 seconds until just wilted.
