  • 1 large yellow onion diced
  • 1 whole red bell pepper diced
  • 4 cloves garlic minced
  • 1 can fire-roasted diced tomatoes
  • 1 can tomato sauce
  • 1 can black beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 cup frozen or fresh corn kernels
  • 1 cup vegetable broth
  • 2.5 tsp chili powder
  • 1.5 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp dried oregano
  • 0.25 tsp cayenne pepper adjust
  • 1 tsp fine salt plus more
  • fresh cilantro roughly chopped
  • lime wedges for serving

Instructions

  1. Heat the @[Olive Oil] in a large #[Dutch Oven] or heavy-bottomed #[Pot] over ^[medium heat]. Add the diced @[Yellow Onion] and @[Red Bell Pepper] and cook, stirring occasionally, for ~[5–7 minutes] until softened and the @[Yellow Onion] is translucent. Add the @[Garlic] minced and cook for ~[1 more minute] until fragrant.
  2. Add all the spices — @[Chili Powder], @[Cumin], @[Paprika], @[Oregano], @[Cayenne Pepper] (if using), and @[Salt] — directly to the #[Pot]. Stir constantly for ~[about 30 seconds] to toast the spices in the @[Olive Oil] and coat the vegetables.
  3. Pour in the @[Fire-Roasted Diced Tomatoes] (with their juices), @[Tomato Sauce], and @[Vegetable Broth]. Add the drained @[Black Beans], @[Kidney Beans], and @[Corn Kernels]. Stir everything together until well combined.
