Heat the 1 tbsp olive oil in a large pot over medium-high heat. Add the diced large yellow onion and 1 whole bell pepper diced and cook, stirring occasionally, for 4–5 minutes until softened. Add the minced garlic and cook for 1 more minute until fragrant.
