Honey Syrup

  • 0.25 cup honey
  • 0.25 cup water

  • 1 cup fresh orange juice from about 3 medium oranges
  • 0.33 cup fresh lemon juice from about 2–3 lemons
  • 0.25 cup fresh lime juice from about 2 limes
  • 1 tsp orange zest finely grated
  • 3 cup sparkling water chilled
  • 2 cup ice

Garnish

  • 1 whole orange thinly sliced into rounds
  • 4 piece fresh mint sprigs

Instructions

  1. Combine the @[Honey] and @[Water] in a small #[Saucepan] over ^[medium-low heat]. Stir constantly for ~[2–3 minutes] until the @[Honey] is fully dissolved and the mixture is smooth. Remove from heat and let cool to room temperature, about ~[5 minutes].
  2. Juice the @[Orange], @[Lemon], and @[Lime]. Strain the juice through a fine mesh strainer into a pitcher to remove any seeds or pulp. Stir in the @[Orange Zest] if using.
  3. Add the cooled @[Honey] syrup to the citrus juice in the pitcher and stir well to combine. Taste and adjust sweetness by adding a little more @[Honey] syrup if desired.
  4. Fill glasses with @[Ice]. Pour the citrus mixture about halfway up each glass, then top with chilled @[Sparkling Water]. Gently stir once to combine without losing too much fizz. Garnish with an @[Orange] slice and a sprig of fresh @[Mint], then serve immediately.
