Prep all ingredients before you start cooking — fried rice moves fast. Mince the 3 cloves garlic, grate the 1 tsp fresh ginger grated, beat the 3 large eggs, slice the 4 stalks green onions thinly sliced (keeping whites and greens separate), and thaw the peas and carrots. Pat the 1 lb shrimp peeled completely dry with paper towels and season lightly with salt and ¼ tsp white pepper.

Heat a wok or skillet over high heat until very hot. Add 1 tablespoon of vegetable oil and swirl to coat. Add the 1 lb shrimp peeled in a single layer and cook undisturbed for 1 minute, then flip and cook another 30–60 seconds until pink and just cooked through. Transfer shrimp to a plate and set aside.
