In a small mixing bowl, whisk together the 3 tbsp soy sauce, 1 tbsp oyster sauce (if using), 1 tsp sesame oil, and ½ tsp white pepper. Set the sauce aside. Make sure your 4 cups cooked jasmine rice is cold and broken into individual grains — this is the key to non-clumpy fried rice.

Heat a wok or skillet over high heat until smoking. Add 1 tablespoon of vegetable oil and swirl to coat.
