Preheat your oven to 400°F and line a baking sheet with parchment paper. In a large mixing bowl, whisk together the 2 cups all-purpose flour, 1 tbsp baking powder, 3 tbsp granulated sugar, and ½ tsp fine sea salt until evenly combined.

Add the cold cubed 6 tbsp unsalted butter to the 2 cups all-purpose flour mixture. Using a pastry blender (or your fingertips), work the 6 tbsp unsalted butter into the 2 cups all-purpose flour until the mixture resembles coarse crumbs with some pea-sized pieces remaining. Speed and cold 6 tbsp unsalted butter are key — don't overwork it.

In a small mixing bowl or measuring cups, whisk together the cold ½ cup heavy cream, 1 large egg, and 1 tsp vanilla extract. Pour the wet ingredients over the 2 cups all-purpose flour-6 tbsp unsalted butter mixture and stir gently with a fork just until a shaggy dough forms. If using ¾ cup mix-ins of choice dried fruit, fold them in now. Do not overmix.

Turn the dough out onto a lightly 2 cups all-purpose flour. Gently pat it into a circle about 1 inch thick. Using a bench scraper or knife, cut into 8 wedges (like a pizza). Transfer the wedges to the prepared baking sheet, spacing them about 1 inch apart.
