Preheat your oven to 350°F. Line a standard 12 cups muffin tin with cupcake liners or lightly grease with cooking spray.

In a large mixing bowl, mash the 1 cup mashed ripe banana from about 2–3 very ripe bananas until smooth. Add the 2 large eggs, ¾ cup plain Greek yogurt full-fat or 2%, 3 tbsp honey, and 1 tsp vanilla extract. Whisk everything together until well combined and creamy.

Add the 1 cup white whole wheat flour, ½ cup vanilla protein powder whey or plant-based, 1 ½ tsp baking powder, ½ tsp baking soda, ¼ tsp fine sea salt, and 1 tsp ground cinnamon directly to the wet ingredients. Stir with a spatula until just combined — do not overmix. A few small lumps are fine. Fold in ½ cup mini chocolate chips or ½ cup walnuts if using.

Divide the batter evenly among the 12 muffin tin cups, filling each about ¾ full. Optionally, sprinkle a few extra ½ cup mini chocolate chips on top for presentation.

Bake for 20–22 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are lightly golden. Do not overbake — ½ cup vanilla protein powder whey or plant-based can dry out quickly.
