These easy, cheesy pizza muffins are the ultimate kid-friendly snack or after-school bite. Savory muffin batter loaded with pizza sauce, mozzarella, and mini pepperoni bakes up into perfectly portioned, grab-and-go treats that taste just like pizza in muffin form. Preheat your oven to ![375°F]. Grease a standard 12-cup muffin tin generously with cooking spray or butter, making sure to coat the rims to prevent sticking.

In a large mixing bowl, whisk together the all-purpose flour, baking powder, garlic powder, Italian seasoning, and salt until combined.

In a separate medium mixing bowl, whisk together the eggs, milk, olive oil, and pizza sauce until smooth and well blended.

Pour the wet ingredients into the dry ingredients and stir gently with a spatula until just combined — a few lumps are fine. Do not overmix or the muffins will be tough.

Fold in ¾ cup of the mozzarella cheese, ⅓ cup of the mini pepperoni, all of the Parmesan cheese, and the diced green bell pepper (if using). Stir until evenly distributed.

Divide the batter evenly among the 12 prepared muffin tin cups, filling each about ¾ full. Top each muffin with a pinch of the remaining mozzarella cheese, a few mini pepperoni, and a light sprinkle of oregano.

Bake for 16–18 minutes, until the tops are golden and a cake tester inserted into the center of a muffin comes out clean. The cheese on top should be melted and lightly browned.
