Main

  • 1.25 lb pork tenderloin thinly sliced against the grain into ¼-inch strips
  • 2 cup fresh pineapple chunks cut into bite-sized pieces; or one 20 oz can of pineapple chunks, drained
  • 1 large red bell pepper seeded and cut into 1-inch pieces
  • 1 large green bell pepper seeded and cut into 1-inch pieces
  • 1 medium yellow onion cut into 1-inch wedges
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger peeled and finely grated
  • 2 tbsp vegetable oil divided

Sauce

  • 3 tbsp soy sauce low-sodium preferred
  • 2 tbsp pineapple juice from the fresh pineapple or reserved from the can
  • 2 tbsp brown sugar packed
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tsp sesame oil

Serving

  • 2 cup cooked white rice steamed; for serving

Garnish

  • 2 tbsp green onions thinly sliced, for garnish
  • 1 tbsp sesame seeds for garnish

Instructions

  1. In a small #[Mixing Bowl], whisk together the @[Soy Sauce], @[Pineapple Juice], @[Brown Sugar], @[Rice Vinegar], @[Cornstarch], and @[Sesame Oil] until the @[Cornstarch] is fully dissolved and the sauce is smooth. Set aside.
  2. Heat ~[1 tablespoon] of @[Vegetable Oil] in a large #[Wok] or #[Skillet] over ^[high heat] until shimmering. Add the @[Pork Tenderloin] strips in a single layer and cook undisturbed for ~[1–2 minutes] until browned on one side, then stir-fry for another ~[1–2 minutes] until just cooked through. Transfer the @[Pork Tenderloin] to a plate and set aside.
  3. Add the remaining ~[1 tablespoon] of @[Vegetable Oil] to the same #[Wok] over ^[high heat].
